Smoked Cauliflower (Mac) and Cheese

Many times we hear people complain about living a Keto, Sugar Free, Grain Free Lifestyle. I can't have this, or I can't give up that. Well, all it takes is some creativity in the kitchen. For example...Smoked Cauliflower and Cheese (instead of Macaroni). We have served this several times to friends and at church functions and everyone is blown away when they find out there is no pasta in there. Of course we used Select Savory Spices spices to liven up the Cauliflower and Cheese!

This is the recipe, I borrowed a friends Mac and Cheese recipe and adjusted it to me it Keto friendly. Thanks Danny M. for the Recipe!

 

We would cut this in half if making it for our family, then again we Love Cheese so next time we might cut the cauliflower in half and not the cheese ;)

Smoked Cauliflower n' Cheese:
4 bags (12oz bags) of frozen cauliflower
1/4 cup butter
1/4 cup coconut flour
3 cups heavy cream
1 (8-ounce) package cream cheese, cut into large chunks
1 teaspoon Select Savory Seasonings, Sea Salt Fine
1/2 teaspoon Select Savory Seasonings, Roasted Garlic Pepper
1/2 teaspoon Select Savory Seasonings, Smoked Sweet Paprika
2 cups (8 ounces) extra sharp Cheddar cheese, shredded
2 cups (8 ounces) Gouda cheese, shredded
1 cup (4 ounces) Parmesan cheese, shredded

Cook cauliflower according to package directions.

In a medium saucepan, melt butter, and whisk flour into the butter. Cook over medium heat for 2 minutes, until sauce is bubbly and thick (cocnut flour does not thicken like regular flour). Whisk in heavy cream and bring to a boil. Cook 5 minutes until thickened. Stir in cream cheese until mixture is smooth. Add Sea Salt Fine and Roasted Garlic Pepper.

In a large bowl, combine 1 cup Cheddar, 1 cup Gouda cheese, Parmesan cheese, cauliflower, and cream sauce. Spoon mixture into an 11 x 9-1/2-inch aluminum roasting pan coated with nonstick cooking spray. Sprinkle top with remaining Cheddar cheese and Gouda cheese. Sprinkle the Smoked Sweet Paprika on top of the cheese.

Place in smoker/oven and cook 1 hours at 225 degrees F, until brown, bubbly and delicious. You can also cook in crockpot: Low for 3-4 hours or High for 1-2, when top is melted and bubbly it is done.
