One of the things that I miss on occasion is having a biscuit or bread with my meal. When that happens this is a great near zero carb recipe that tastes great and is real simple to make. Thank You to Lora Carver for the recipe!! Also, if you are not a fan of garlic try using Select Savory Seasonings Savory Bagel Seasoning instead.
-1 Cup: crushed pork rinds (you can put the pork rinds in a large zip lock bag and crush with a rolling pin or crush them in a blender)
-1 Cup: Shredded Cheddar Cheese
-2 TBSP Sour Cream
-1 tsp baking powder
-Preheat oven to 450.
-In a large mixing bowl combine the dry ingredients (pork rinds, cheese, baking powder & your choice of Select Savory Seasonings)
-Scramble the eggs with the sour cream until it is smooth
-Pour the egg mixture into the dry mix and stir until combined
-Grease a muffin tin or a muffin top pan and add 2 tbsp of the biscuit batter to each tin. (You can also try these as drop biscuits on a baking sheet too on parchment paper).
-Bake for 13 mins. Serve warm and Enjoy!!
