Low Carb Pizza Cups
In high school my class got together often and on may of these get togethers we would make pizza cups with the canned dough that you find in the dairy section of the grocery store. These were the ones that Popped! when you opened them. I have not made these in several years, and for some reason I wanted to see if I could recreate these and keep the Keto and Low Carb.
Well my friends, Mission Accomplished!!!! These tasted as good as I remembered, and my boys like them even more than when we make pizza!!! We will Definitely be making these more often, and I hope that you enjoy them too.

If you have cookie cutters, the circle that I cut is 4" across.
Ingredients for Pizza Cup Dough:
3.5 cups shredded mozzarella cheese
1.5 cup crushed pork rinds (also known as pork panko) I use a blender and make my own crushed pork rinds. You want the consistency of breadcrumbs. If you do not want to make your own you can always buy something like this from amazon:

4 tbsp Full Fat Cream Cheese (I always use Philadelphia Cream Cheese because the generic brands usually have more carbs/sugar in them)
1 TBSP Select Savory Seasonings Select Pizza Seasoning
2 tsp white wine vinegar
2 eggs
Pizza Cup Toppings:
16 Slices of Pepperoni
½ lb cooked mild breakfast sausage (optional)
Other pizza toppings that you enjoy: onion, peppers, bacon, Italian sausage, etc.
Directions:
-Preheat the oven to 400°F (200°C).
-Heat mozzarella and cream cheese in a small, non-stick pan on medium heat or in a bowl in the microwave oven.
-Stir until they melt together. Add the other ingredients and mix well.
-Moisten your hands with olive oil or butter and flatten the dough on parchment paper, or you can also use a rolling pin to flatten the dough between two sheets of parchment paper. You want the dough to be about 1/4" thick
-Remove top parchment sheet (if used). Use your dough press to cut out as many circles as you can with the rolled-out dough. Once the circles are cut remove the excess dough and set aside to roll out again in a minute.
-Take the circles that you cut out and place them into a greased muffin tin to for a little cup to place your ingredients into
-Once your first round of circles are in the muffin tins, roll out the dough again and cut out more circles. Continue this process until have not dough left, or there is not enough left to make anther circle. You should be able to get at least 16 pizza cups.
-After you have made your cups, fill the cups with your ingredients:
-Place a spoonful of tomato sauce in the bottom of each cup
-Sprinkle breakfast sausage into each cup
-Sprinkle the mozzarella cheese into each cup
-Place one piece of pepperoni on top of the cheese in each cup
-Bake in the oven at 400 Degrees for 15 minutes
-Remove the pizza cups from the oven and allow them to cool
-Serve And Enjoy!!
